Fattoush Salad
A fresh and zesty Middle Eastern salad with crispy pita and sumac.

Ingredients
- 2 pita bread, toasted and cut into pieces
- 1 head romaine lettuce, chopped
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 bunch radish, sliced
- 0.25 red onion, thinly sliced
- 60 ml cup, fresh parsley, chopped
- 60 ml cup, fresh mint, chopped
- 45 ml tbsp, olive oil
- 30 ml tbsp, lemon juice
- 5 ml tsp, sumac
- 0 salt, to taste (optional)
- 0 black pepper, to taste (optional)

Method
- Toast the pita bread until crispy, then cut into pieces. 5 min
- Chop the lettuce and place in a large bowl. 5 min
- Dice the cucumber and tomatoes, and add to the bowl. 2 min
- Slice the radish and onion, and add to the bowl. 2 min
- Chop the parsley and mint, and add to the bowl. 2 min
- In a small bowl, mix olive oil, lemon juice, sumac, salt, and pepper. 1 min
- Pour the dressing over the salad and toss gently. 1 min
- Add the toasted pita pieces just before serving and toss lightly again. 1 min
