Aloo Gobi
A classic Indian dish of potatoes and cauliflower spiced with turmeric and cumin, perfect as a side or light dinner.

Ingredients
- 2 potatoes, peeled and diced into cubes.
- 1 cauliflower, cut into florets.
- 1 onion, finely chopped.
- 2 tomatoes, chopped.
- 2 cloves garlic cloves, minced.
- 1 tbsp ginger, grated.
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 3 tbsp cooking oil
- 1 tsp salt, or to taste.
- 1 bunch coriander leaves, for garnish. (optional) (optional)

Method
- Heat 3 tbsp of cooking oil in a large pan over medium heat. 2 min
- Add 1 tsp of cumin seeds and wait for them to sizzle. 1 min
- Add 1 onion, finely chopped, and sauté until soft. 3 min
- Stir in 2 garlic cloves, minced, and 1 tbsp of grated ginger; cook for another minute. 1 min
- Add 1 tsp of turmeric powder and stir to combine. 1 min
- Add 2 potatoes, diced, and 1 cauliflower, cut into florets; stir well. 1 min
- Add 2 tomatoes, chopped, and 1 tsp of salt; mix to coat veggies. 1 min
- Cover and cook for 15 min, stirring occasionally, until potatoes and cauliflower are tender. 15 min
- Garnish with chopped coriander leaves before serving. 1 min
