Egg Drop Soup

Ingredients

  • 1500 ml chicken broth, homemade or store-bought
  • 1 piece of ginger, sliced thinly
  • 4 scallions, sliced
  • 2 large eggs, beaten
  • 1 tsp tsp, cornstarch mixed with 2 tsp water
  • 0 white pepper, to taste (optional)

Method

  1. In a pot, bring the chicken broth to a simmer over medium heat (5 min). 5 min
  2. Add the sliced ginger and simmer for another 3 min. 3 min
  3. Remove the ginger pieces from the broth. 0 min
  4. Slowly drizzle the beaten eggs into the hot broth while stirring gently until the eggs create ribbons (1 min). 1 min
