Ingredients
- 1 cup green or brown lentils
- 2 cups water or vegetable broth
- 1 cup long-grain rice
- 2 large onions, sliced thinly
- 0.25 cups olive oil
- 1 tsp cumin
- 0.5 tsp salt
- 0.25 tsp black pepper
- 0.25 tsp cinnamon

Method
- Heat olive oil in a large pot over medium heat for 2 min. 2 min
- Add the sliced onions and cook, stirring occasionally for 15 min, until caramelized. 15 min
- Add cumin, salt, black pepper, and cinnamon to the onions. Stir for 1 min. 1 min
- Add the lentils and water or vegetable broth to the pot. Bring to a boil and cover. 0 min
- Reduce heat and simmer for 10 min. 10 min
- Stir in the rice and cover again. Cook for an additional 15 min or until rice and lentils are tender. 15 min
