Wide rice noodles stir-fried with chicken, Chinese broccoli and egg in a dark soy sauce, ready in under 30 min.

Ingredients
- 300 g wide rice noodles, soaked in warm water for 30 min, drained
- 200 g chicken breast, sliced thinly
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 250 g Chinese broccoli, cut into 2-inch pieces
- 2 eggs, lightly beaten
- 4 tbsp dark soy sauce
- 1 tbsp sugar

Method
- Heat 1 tbsp oil in a large pan over medium heat. 2 min
- Add garlic and stir-fry for 30 seconds until fragrant. 1 min
- Add sliced chicken and cook until browned, about 3-4 minutes. 4 min
- Push chicken to one side, add another tbsp of oil, and pour in beaten eggs. 1 min
- Scramble the eggs until just set, then mix with chicken. 2 min
- Add Chinese broccoli and stir-fry for 2 minutes until tender. 2 min
- Add soaked rice noodles, dark soy sauce, and sugar; stir everything together until heated through, about 3 minutes. 3 min
- Serve hot, garnished with extra soy sauce if desired. 1 min
