Chicken Fried Rice
Quick and tasty fried rice using leftover chicken and day-old rice.

Ingredients
- 2 cups cooked rice, day-old is best for texture
- 1 cup cooked chicken
- 2 eggs, beaten
- 1 cup frozen peas
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 3 green onions, sliced (optional) (optional)

Method
- Heat 1 tbsp vegetable oil in a wok over medium-high heat for 1 min. 1 min
- Add beaten eggs and scramble until just set, about 2 min. 2 min
- Remove eggs from the wok and set aside. 1 min
- Add remaining oil to the wok. 0 min
- Add cooked chicken and peas; stir-fry for 3 min until heated through. 3 min
- Add cooked rice and soy sauce; mix well, breaking up clumps. 2 min
- Add scrambled eggs back into the pan and mix to combine, 2 min. 2 min
- Add sliced green onions (if using) and stir-fry for another minute. 1 min
