Salade Niçoise

A fresh French salad featuring tuna, veggies, and a tangy vinaigrette.

Ingredients

eggs

  • 4 large eggs, hard-boiled, peeled, and quartered

tuna

  • 400 g g canned tuna, drained, flaked

beans

  • 200 g g green beans, trimmed and cut

potatoes

  • 300 g g potatoes, peeled and diced

tomatoes

  • 200 g g cherry tomatoes, halved

olives

  • 100 g g black olives, pitted

vinaigrette

  • 6 tbsp tbsp olive oil
  • 2 tbsp tbsp red wine vinegar
  • 1 tsp tsp Dijon mustard

seasoning

  • 0 salt
  • 0 black pepper

Method

  1. Boil a pot of water and cook potatoes for 10 min until tender. 10 min
  2. Add green beans to the pot with potatoes and cook for an additional 5 min. 5 min
  3. Drain potatoes and green beans; let them cool slightly. 2 min
  4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette. 5 min
  5. In a large bowl, combine potatoes, green beans, tuna, cherry tomatoes, and olives. 2 min
  6. Drizzle with vinaigrette and toss gently to combine. 1 min
  7. Top with hard-boiled eggs and season to taste with salt and pepper. 1 min
