Huevos Rancheros
A classic Mexican breakfast of fried eggs on tortillas with warm salsa and beans.

Ingredients
- 4 eggs, fried to your liking
- 4 corn tortillas, warmed
- 1 can can black beans, rinsed and warmed
- 2 tomatoes, chopped
- 1 onion, chopped
- 1 jalapeño, seeded and chopped
- 2 tbsp tbsp fresh cilantro, chopped
- 2 tbsp tbsp vegetable oil, for frying
- 1 tsp tsp salt, to taste (optional) (optional)

Method
- In a skillet, heat 2 tbsp vegetable oil over medium heat (2 min). 2 min
- Add chopped onion and jalapeño, sauté until soft (3 min). 3 min
- Add chopped tomatoes and salt, simmer until the mixture thickens (5 min). 5 min
- In a separate pan, fry 4 eggs to your liking (3 min). 3 min
- Warm corn tortillas in a dry pan or microwave (2 min). 2 min
- To serve, place each tortilla on a plate, top with black beans, salsa, and a fried egg (1 min). 1 min
