Tom Yum Soup

Ingredients

  • 500 g shrimp, peeled and deveined
  • 4 cups water
  • 2 lemongrass, cut into 2-inch pieces and smashed
  • 3 slices galangal
  • 4 kaffir lime leaves, torn into pieces
  • 3 bird's eye chilies, smashed
  • 200 g mushrooms, sliced
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp cilantro, chopped (optional) (optional)

Method

  1. In a pot, bring 4 cups of water to a boil. 5 min
  2. Add lemongrass, galangal, kaffir lime leaves, and chilies. 2 min
  3. Simmer for 10 min to infuse the flavors. 10 min
  4. Add sliced mushrooms and cook for another 5 min. 5 min
  5. Finally, add shrimp, fish sauce, and lime juice. Cook until shrimp are pink, about 2-3 min. 3 min
