Massaman Beef Curry
Slow-simmered beef with potatoes, peanuts, and coconut in a mild, fragrant curry; a weekend dish.

Ingredients
- 600 g beef chuck, cut into 2.5 cm cubes
- 2 tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp massaman curry paste
- 400 ml coconut milk
- 450 g potatoes, diced
- 150 g roasted peanuts
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 2 bay leaves
- 1 cinnamon stick
- 2 cups water

Method
- Heat oil in a large pot over medium heat. 5 min
- Add onions and sauté until soft, about 5 min. 5 min
- Stir in minced garlic and cook for 1 min until fragrant. 1 min
- Add beef cubes and brown on all sides, about 10 min. 10 min
- Stir in massaman curry paste and sauté for 2 min. 2 min
- Pour in coconut milk, water, fish sauce, and brown sugar. Mix well. 1 min
- Add potatoes, bay leaves, and cinnamon stick. 0 min
- Bring to a boil, then reduce to low heat and simmer, covered, for 1.5 hr. 1 h 30 min
