Tiramisu

Ingredients

  • 4 egg yolks, separated from whites and pasteurized if concerned about egg safety.
  • 90 g granulated sugar
  • 250 g mascarpone cheese
  • 240 ml cup of strong brewed coffee, cooled to room temperature
  • 30 ml tbsp coffee liqueur, (optional) (optional)
  • 200 g ladyfingers
  • 30 g tbsp cocoa powder

Method

  1. In a mixing bowl, whisk egg yolks and sugar until pale and creamy (about 5 min). 5 min
  2. Gently fold in mascarpone cheese until smooth. 5 min
  3. In a shallow dish, combine brewed coffee and coffee liqueur if using. 1 min
  4. Quickly dip each ladyfinger in the coffee mixture, just enough to soak them without getting mushy. 2 min
  5. Layer half of the soaked ladyfingers in the bottom of a serving dish. 2 min
  6. Spread half of the mascarpone mixture over the ladyfingers. 2 min
  7. Repeat with the remaining ladyfingers and mascarpone mixture. 2 min
  8. Cover and refrigerate for at least 4 hours, or overnight for best results. 4 h
  9. Before serving, dust the top with cocoa powder. 1 min
