Spaghetti Carbonara

Ingredients

  • 400 g spaghetti
  • 150 g guanciale, diced
  • 4 eggs, beaten
  • 100 g pecorino cheese, grated
  • 0 tsp salt (optional)
  • 0 tsp black pepper (optional)

Method

  1. Boil a large pot of salted water and cook the spaghetti according to package instructions (10 min). 10 min
  2. While the pasta cooks, place diced guanciale in a large pan over medium heat. Cook until crispy (about 5 min). 5 min
  3. In a bowl, combine the beaten eggs and grated pecorino cheese. Mix well. 0 min
  4. Once the spaghetti is cooked, reserve 1 cup of pasta water, then drain the rest. 2 min
  5. Add the hot spaghetti to the pan with guanciale. Remove from heat. 0 min
  6. Quickly pour the egg and cheese mixture over the pasta, stirring rapidly. Add reserved pasta water gradually until creamy. 2 min
