Beef Enchiladas

Rolled tortillas of seasoned beef under red enchilada sauce and cheese, baked; feeds a family.

Ingredients

  • 450 g Ground beef, cooked and drained until browned.
  • 1 Large onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 8 Tortillas
  • 400 ml Enchilada sauce
  • 200 g Shredded cheese

Method

  1. Preheat oven to 180°C (350°F). 5 min
  2. In a pan, sauté onion and garlic until softened (about 5 min). 5 min
  3. Add ground beef, cumin, chili powder, and salt; cook until browned (about 5 min). 5 min
  4. Spread 1/3 of the enchilada sauce on the bottom of a baking dish. 2 min
  5. Fill each tortilla with beef mixture, roll them up, and place seam side down in the dish. 10 min
  6. Pour remaining enchilada sauce over the top of the rolled tortillas. 2 min
  7. Sprinkle cheese evenly over the sauce. 1 min
  8. Cover with foil and bake for 20 min. 20 min
