Vegetable Tempura

Crispy and light vegetable tempura that makes for a fun, crunchy snack or side. Perfect for weekend cooking!

Ingredients

  • 2 sweet potatoes, peeled and cut into thin strips
  • 1 onion, sliced into rings
  • 200 g green beans, trimmed
  • 100 g all-purpose flour
  • 1 egg
  • 250 ml ice water
  • 500 ml vegetable oil, for frying

Method

  1. Heat the vegetable oil in a deep pan over medium-high heat (about 180°C or 350°F). 5 min
  2. In a bowl, mix the flour, egg, and ice water until just combined (don’t overmix). 5 min
  3. Dip the sweet potato strips into the batter, allowing excess to drip off. 1 min
  4. Carefully place the battered sweet potatoes in the hot oil and fry for 3-4 minutes until golden brown. 4 min
  5. Remove sweet potatoes and drain on paper towels. Repeat with onion rings and green beans. 5 min
